Chef Waldo is currently full time exec chef at Due Fiori, possibly our favorite LB restaurant. But these specials aren’t going to be anything like their menu, different and just as good!
Waldo is going to be hand milling special Sonoran wheat from AZ, his home state, and cooking based on flavors from his mother’s cooking.
To help wash down this delicious food, winemaker Alejandro of Chateauneuf du Fargosonini will be in da house. A natural winery in Central California creating unique new bevvies from fruits and grapes that would be otherwise lost or wasted. His focus is on Dionysian winemaking history. Stepping far away from what wine has become post industrialization and narrowing in on ancient winemaking styles, creating very living, changing and wild juice. Some grapes are dried by the sun, some aged in clay, some not. It’s an ever growing experiment producing fun, energetic wines you’ve never experienced before.
